La Patisserie space to have new business

On Monday night the Select Board approved a request to open a business in the old La Patisserie space at 32 Church St.  Celine Kimberly, a Winchester resident born in France, asked for an all-alcoholic beverage package store license, which was unanimously approved.  But it will be more than a liquor store.  Celine and her husband Thomas Kimberly plan to open Nouvelle Maison, which will be similar to La Patisserie but with enhancements. 

They hope to have charcuterie, hot and cold dishes, along with breads and croissants. There will only be about 12 seats so it will not be a sit-down restaurant. They will also be able to sell bottles of alcohol but will not serve any alcohol.  The Kimberlys have signed a long-term lease and hope to begin renovations and improvements soon. 

Their attorney told the Select Board it would be like a combination of the former wine and cheese store (Pairings) and La Patisserie. Celine will be the manager under the liquor license and the hours will likely be Monday through Friday 7-7 and Saturday and Sunday 9-7. They hope to open late summer or early September 2024.
